<p>Friends, I want to tell you about this <a target="_blank" href="https://www.amazon.com/dp/B095QC2NLP?ref=ppx_yo2ov_dt_b_product_details&amp;th=1&#038;_encoding=UTF8&#038;tag=grlasbl0a-20&#038;linkCode=ur2&#038;linkId=bb98a2362ea4b786aeed91ced30e3e83&#038;camp=1789&#038;creative=9325" rel="noopener">Amazing GreenPan Frying Pan</a>* thingie.  I needed a new non-stick frying pan. I hated the idea of getting a PFAS spewing cooking utensil. I did not want to spend a lot of money. The <a target="_blank" href="https://www.amazon.com/dp/B095QC2NLP?ref=ppx_yo2ov_dt_b_product_details&amp;th=1&#038;_encoding=UTF8&#038;tag=grlasbl0a-20&#038;linkCode=ur2&#038;linkId=bb98a2362ea4b786aeed91ced30e3e83&#038;camp=1789&#038;creative=9325" rel="noopener">Amazing GreenPan Frying Pan</a>* is a non-stick ceramic surface aluminum 10 incher with a glass cover.</p>
<p>The key term here, I think, is &#8220;GreenPan.&#8221; I don&#8217;t know anything about this company. Maybe they are evil, or green washing. But it seems pretty legit to me.</p>
<p>It is inert, has excellent heat distribution qualities, a nice fitting lid, does NOT go in the dishwasher but practically washes itself by hand (it is, after all, non-stick).</p>
<p>Apparently it was invented in 2007, so there is a good chance you have not bought a new frying pan since they existed.  They sell all sorts of pans. I did not know about them. Maybe everybody else did but not me. But now I know and so do you as well.</p>
<p>I love my 10&#8243; GreenPan with glass lid. No kidding.</p>

										<content:encoded><![CDATA[<p>The ingredients are pretty standard, but there is some technique, which I focus on here. Best if the main ingredients (parsley, cucumber, and tomato) are fresh.</p>
<p>Take one cup of (dry) Bulgar wheat, and add one cup of boiling water. Measure the water out while cold and don&#8217;t let any boil off, so it will be a bit more than a cup while boiling.  Let that sit for a while.</p>
<p>Two or three bunches of parsley (any kind, fresh, curly is better) with most of the stems removed, cut into small bits. (You can use some cilantro in here if you want.)</p>
<p>One bunch of fresh mint, leaves only (no stems) chopped up very small.</p>
<p>Three bunches of scallions, or one or two bunches and some shallots, or a small to medium very sweet onion. Some combination of these, experiment, figure out what you like. You&#8217;ll eventually settle on scallions.  Chip this onion-ish material into small bits.  Meanwhile, heat a dry skillet/fry pan (no oil) not quite hot enough to fizz a drop of water, turn off the heat. Take the pan off the heat and throw the chopped up onion substance on that fry pan and stir it around. DO NOT COOK IT. This is just to force out some of the syn-propanethial-S-oxide.</p>
<p>Dice up about the same volume of tomato that you&#8217;ve already go with the parsley and onion, plus a bit more. It is a matter of taste. This is about six Roma tomatoes, or any other combination.  Nice alternative: Cut a big pile of cherry tomatoes in half.</p>
<p>Two small or one larger cucumbers.  Mostly peeled, remove most of the seeds (just cut in half long wise and scrape across the seedy area with a spoon).  Does not need to be perfect. Diced.</p>
<p>Squeeze three or four limes and one lemon, run the liquid through a screen to get out any bits of seeds. You can skip the lemon, that&#8217;s just a think I do.</p>
<p>I go heavier on the spices than other recipes:</p>
<p>1/2 tsp &#8211; 1/3 tsp salt<br />
1/2 tsp fresh ground black pepper<br />
3 tablespoons virgin olive oil (yes, olive oil is a spice in this dish.)<br />
2-3 tsp cumin.</p>
<p>Throw it all together and mix it up.</p>
<p>Best if it sits for a while, but only a little while. Doesn&#8217;t really keep that long, so eat that day and the next day. (It will still be edible but cucumber doesn&#8217;t last).</p>
<p>Serve with Naan or Pita.</p>

										<content:encoded><![CDATA[<p>For many years, scientists who studied biology, behavior, and ecology (under the name of various disciplines) looked at resources, including and especially food, as a major determinant of social structure in social animals, herd structure in herd animals, and so on.  Then, there was a revolution and it quickly became apparent that sex, not food, underlies everything and is the ultimate explanation for the variation we see in nature. That pair of dimes lasted for a while, then the other penny dropped and thanks to key research done by a handful of people (including me, in relation to human evolution), it became apparent that there was a third significant factor, that ultimately trumped sex as an organizing force.  Food. <span id="more-32234"></span></p>
<p>I hate it when the author of a book about something historical (history = written records) or even contemporary requires a paleolithic or prehistoric context.  If I had a dime for every first chapter I&#8217;ve seen where a perfectly expert expert drones ignorantly on about how their book is a follow on of something that started in Olduvai Gorge and side stepped the Neanderthals and all that, I&#8217;d have several dollars.  Praise the gods that Julian Cribb, in his new book <a target="_blank" href="https://www.amazon.com/gp/product/1108712908/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=1108712908&#038;linkCode=as2&#038;tag=grlasbl0a-20&#038;linkId=bcbf8dc95b2b03a4979301eb2f0393a1" rel="noopener noreferrer">Food or War</a><img decoding="async" src="//ir-na.amazon-adsystem.com/e/ir?t=grlasbl0a-20&#038;l=am2&#038;o=1&#038;a=1108712908" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />, only does that for a few paragraphs and does it well!</p>
<p>This book is important, impressive, and a must read.</p>
<p>Food has organized society, politics, war, settlement, colonialism, and the economy more than any single factor, and food has been revolutionized by those things as well.  As a simple way to understand this, consider any particular traditional food ask yourself, &#8220;would this even be possible were it not for the ability to sail up wind in a ship?&#8221;  The answer, once you get to it, will almost always be no.  Plantains, grass-based cereal crops, maize, potatoes, cassava, a range of vegetables such as tomatoes and various gourds and squash, green leafy things, all of it, are now available to grow in each and every habitat they can be grown in, not just the habitats that happen to be in the geographical region they were domesticated in. And, importantly, this transition happened centuries ago, depending on where one looks.  Much of it happened before missionaries or explorers accounts even have a chance to flesh out the details of native live, and certainly long before anthropologists or other professional observers arrived on the scene.</p>
<p><a target="_blank" href="https://www.amazon.com/gp/product/1108712908/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=1108712908&#038;linkCode=as2&#038;tag=grlasbl0a-20&#038;linkId=bcbf8dc95b2b03a4979301eb2f0393a1" rel="noopener noreferrer">Food or War</a><img decoding="async" src="//ir-na.amazon-adsystem.com/e/ir?t=grlasbl0a-20&#038;l=am2&#038;o=1&#038;a=1108712908" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /> is the book you must read now to understand the complex historical dynamics behind what you are eating.</p>
<p>The book covers food up to the present, and all the major considerations related to it. Drought, loss of land, climate change, migration, foodies, permaculture, organic farming, and on and on are all addressed in this well written scholarly but for everyone volume.  And Cribb makes a stab at projecting into the future, and suggesting what we may consider doing about our food related problems.</p>
<p>This is not a happy book. A book dedicated to Paul Ehrlich is not going to be a happy book.  It is a black book with blood red writing and a skull and crossbones on the cover. The title puts an <em>or</em> between the words food and war.  This is not the read you need to get you away from the awful discourse polluting our psyches at this moment in history. But it is the book you need to read in order to understand and contextualize many of our policy related problems in the here and now. Plus, it is simply very well written, very well researched, and you will learn things. Many things.</p>

										<content:encoded><![CDATA[<p>OK, there is a report just out that suggests that we are playing too fast and loose with food additives and other chemicals, and that we might want to draw back on some of that. Fine. We should maybe.</p>
<p>But I&#8217;ve already seen this report misconstrued, with panic ensued.  I&#8217;ve seen people suggest that we should no longer use microwaves for food. Or that we should not dishwash plastic or put plastic containers in the microwave. And some other stuff.</p>
<p>For both of those behaviors, the concern is the potentially harmful BPA getting out into our food. If you put BPA laced objects in the microwave of dishwasher, that could be a problem.</p>
<p>The thing is, if you&#8217;ve been paying attention to BPAs all along, then you probaby don&#8217;t have BPA laced water bottles or microwavable containers, so there is NOTHING TO SEE HERE. Typical &#8220;Tupperware&#8221; (never actually Tupperware) wares typically don&#8217;t have BPA. Most water bottles don&#8217;t either.</p>
<p>Here&#8217;s the thing. This report covers a LOT of things, not just BPAs, not just microwaving things or cleaning water bottles. And, the report is pretty easy to read and very clear.  Well, the whole issue of what to do and not do is not necessarily clear, but you can easily figure out what they are getting at.</p>
<p>There are two sources. Read them, and then you&#8217;ll know what all the buzz is about.  An overview from the American Association of Pediatrics is <a href="https://www.aap.org/en-us/about-the-aap/aap-press-room/Pages/AAP-Says-Some-Common-Food-Additives-May-Pose-Health-Risks-to-Children.aspx">here</a>. <p>There are items of concern here, but if you simply stop using plastic in the microwave and think you are done, chance are that a) you did something useless and b) you are missing something important.</p>

										<content:encoded><![CDATA[<h3>First, consider cooking something other than a turkey</h3>
<p>Cooking turkey is actually kind of a dumb idea. Most people don&#8217;t ever cook turkey.  Turkey is like chicken &#8230; it&#8217;s a domestic bird that is familiar to all Americans &#8230; but it is very difficult to cook in a way that does not ruin it.  So once a year, you cook this huge bird and try not to ruin it, and invite everybody that is important to you over to see if it worked.</p>
<p>As a result of this the truth is that many people have never had good turkey.  They&#8217;ve only had ruined turkey.  And for each of these people, what they think turkey tastes like is unique to the particular way their family&#8217;s turkey cooker learned to ruin the turkey every year.</p>
<h3><em>How to cook a turkey</em></h3>
<p><span id="more-27931"></span></p>
<p>&#8230; you might as well try doing it the most difficult way possible.  But before considering that, try this idea on for size: Cook more than one a year and use different methods to see how it turns out!  (Jeesh, you&#8217;d think this would be obvious.)</p>
<p>This isn&#8217;t the only way, but it is a good way.  It is also the hardest way that I&#8217;ve done it.</p>
<p>My daughter, Julia, is named after two people. One of them is Julia Child. I happen to think Julia Child has had more influence on American society than most other people, by helping to make varied and interesting cuisine part of American culture.</p>
<p>One day when Julia was a very young child (my Julia, not Julia Child), I was out walking her in her carriage. I turned the corner around the Van Serg Building on the Harvard Campus and practically ran into Julia Child, who was walking in the other direction on her daily constitutional.</p>
<p>&#8220;Oh, what a cute child,&#8221; she said. (And she was a cute child, I assure you.) &#8220;What&#8217;s her name.&#8221;</p>
<p>Well, that was an interesting conversation&#8230;..</p>
<p>Anyway, I want to suggest that you use a recipe invented by Julia Child for cooking your Thanksgiving Turkey this year. It is called &#8220;Laid Back Turkey.&#8221; It is, in my view, the best possible way to cook a turkey.</p>
<p>But it is not for the faint of heart&#8230;.</p>
<h3>Laid Back Turkey a la Julia Child</h3>
<p>You can find more specific instructions in <a target="_blank" href="https://www.amazon.com/gp/product/0394532643/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=0394532643&#038;linkCode=as2&#038;tag=grlasbl0a-20&#038;linkId=7653239be17804162344524a6e1312be" rel="noopener noreferrer">The Way to Cook</a><img loading="lazy" decoding="async" src="//ir-na.amazon-adsystem.com/e/ir?t=grlasbl0a-20&#038;l=am2&#038;o=1&#038;a=0394532643" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" /> by Julia Child. Julia made this on her show once, so somewhere out there is a video of this process. Here, I&#8217;ll just give you the basic idea. If you are the kind of person to even try this, the you are also surely willing to experiment and take some chances. All you should really need is the basic theory. If you are the kind of cook who prefers specific instructions and actually follows recipes, then hang up now&#8230;</p>
<p>The first thing you need to do is to remove all but a few of the bones from the bird.</p>
<p>Lay the uncooked turkey on it&#8217;s front. Slice down to the bone along the spine. Use this slit as the starting point to expose the entire skeleton, working your way around the rib cage, etc., all of which you will remove except for the wing bones and the distal leg bones. Cut through the wing and leg joints at this point in order to free the &#8220;outer&#8221; part of the bird from the main skeleton.</p>
<p>Caution: As you work your way around to the front &#8230; to the breastbone &#8230; your chances of cutting through the skin increases. Don&#8217;t do this.</p>
<p>When you&#8217;ve got the skeleton out of the turkey, lay the deboned bird on it&#8217;s front, exposed flesh facing up, and brush the livid tissue with an appropriate oil based marinade. I recommend half grape seed oil and half olive oil with lots of thyme, some black pepper, and a little salt.</p>
<p>In the meantime, make a huge pile of stuffing. Put this pile on a flat pan with very low sides big enough to hold the turkey. You are going to lay the turkey on this pile later. If possible, put the stuffing on a cookie sheet that, in turn, fits into a large low-sided baking pan. You can even fashion the pan from aluminum foil or from those disposable pans you get in the spice and cooking supply aisle of your basic grocery store. You&#8217;ll see later why this method &#8230; the cookie sheet set into a crushable aluminum foil pan &#8230; is useful.</p>
<p>Now, back to the turkey. You&#8217;ve got the exposed flesh facing up, and you&#8217;ve put it on some kind of a pan, temporarily. Fire up the broiler and slide the bird in there. Watch it closely. You want to brown the exposed flesh and hopefully get it cooked a quarter to a half inch deep. The more cooking at this stage, without burning, the better.</p>
<p>Now, take the large, floppy bird that is now covered with hot oil (so be careful!) and lay it flesh side down over the big pile of stuffing. Manipulate the corpse to make it look like nothing&#8217;s happened, like it is supposed to be this way.  Brush the skin, which is now facing up, with your favorite substance for these purposes. I recommend coating the skin with oil and sprinkling copious amounts of dried green spice (thyme and basil &#8230; avoid oregano) for this purpose.</p>
<p>Put this in the oven and cook until done. It will take a fraction of the time that a &#8220;normal&#8221; turkey will take. It is also a good idea to make sure the stuffing is not cold &#8230; in fact, it could be heated up in advance .. when you put the turkey on there. You want to avoid partly cooking bird-meat, cooling it down, then cooking it again. Makes it a bit rubbery.</p>
<p>Now, here comes the fun part.</p>
<p>When the bird is done, wrangle it onto a huge cutting board, big enough to hold this laid back bird. This is where the cookie sheet inside the big pan is helpful. You could poke a hole in the pan and drain it into a bowl sitting in the sink, then cut away one side of the pan, and then use this fenestration to slide the bird-bearing cookie sheet out of what is now a scrap aluminum mess.  To cut the turkey properly, slide it off the cookie sheet onto a huge cutting board. Have a mop handy. Might be good to wear rubber boots with a good tread, as the floor tends to get slippery at this stage.</p>
<p>Get <a href="https://www.kitchenistic.com/best-meat-cleavers/">a whopping big knife</a>, which you have sharpened, the biggest spatula you have (maybe two) and possibly something large and flat and metal like a cookie sheet cut in half down the long axis. Maybe a flattened hubcap. Whatever you&#8217;ve got that is big and flat and thin.</p>
<p>Having an assistant help you with this step is a good idea, if it is someone you work well with.</p>
<p>Get the plates ready &#8230; the plates you will be serving dinner on.</p>
<p>Cut the laid back turkey right down the middle, the long way, in half. Using large flat devices, separate the two halves by a couple of inches.</p>
<p>Now, cut a slice about a third of an inch from this freshly exposed cut &#8230; so you are cutting a saggital section from near the midline of the bird. Use your flat devices to keep this slice from falling apart, angle it onto the flat surface, and move it over to one of the plates. Now, carefully slide this big slice onto a plate. You will probably have to curve the ends in to make it fit on the plate.</p>
<p>Now, look at what you&#8217;ve done. You have a slice of white meat and a slice of dark meat, nestled along side a slice of stuffing, all in one glorious unit. Because both forms of meat will cook much more nicely with this method than the usual ways of cooking turkey, your guests will enjoy both even if they&#8217;ve come to the table with preconceptions about their preference for dark vs. light meat.</p>
<p>Repeat this slicing operation, working from both halves of the turkey. As you work your way laterally, make the slices a bit thicker if you want all of the servings to be similar in total mass.</p>
<p>If the slicing procedure does not work well, don&#8217;t worry. Just cut the bird up and serve as normal. The flavor will be far superior to any other method you&#8217;ve ever tried, and the meat will be moister and tastier.</p>
<p>An interesting variation of Laid Back Turkey is Laid Back Flock. Here, you get a few birds, like a few of Cornish game hens, two big chickens, and a medium sized turkey. You totally fillet the smaller birds (cut off the wings and the distal legs and get rid of the skin) and arrange them over the giant pile of stuffing, and cover them all with the turkey. This can produce astounding results.</p>
<p>The frame of the turkey can be used for stock. Also, don&#8217;t forget to make some excellent gravy to go on this dish.</p>

										<content:encoded><![CDATA[<p>I&#8217;ve got two pumpkin pie recipes for you. One is the way I usually make it, and it is the best pumpkin pie.  The other way also turns out to be excellent, but it is designed for kids who don&#8217;t like pumpkin pie even though we think they should. I think kids are sometimes repelled by that pumpkin pie spice flavor. In fact, this kid friendly pie may be good for adults who are just plain sick and tired of everything having to taste like pumpkin pie spice this time of year and want a break, but still want their pumpkin pie.<br />

<p><H3>The Best Pumpkin Pie</H3></p>
<p>This makes one pie. You probably want two, so double everything.</p>
<p><strong>INGREDIENTS</strong></p>
<p>Dry ingredients:<br />
3/4 cup granulated sugar<br />
1/2 tsp salt plus a pinch<br />
2 tsp ground cinnamon<br />
1 tsp ground ginger<br />
1/2 tsp ground cloves<br />
1/4 tsp allspice</p>

2 extra large eggs<br />
1 regular can of pumpkin stuff (pictured)<br />
12 ounces of 50:50 mix of whole evaporated milk and heavy cream.</p>
<p><strong>PROCEDURE</strong></p>
<p>PREHEAT oven to 425F.  Set the rack to above the middle of the oven but not too high up.</p>
<p>Mix dry ingredients in one bowl.<br />
Mix wet ingredients in a different bowl.<br />
Mix the wet and dry ingredients together.</p>
<p>Put a pie crust in a pie shell.  Make the edges all fancy looking by using a fork. Cover the edges of the crust with aluminum foil. You may remove this foil later during the baking process, or not remove it at all, depending on how the crust is cooking (the foil is to avoid the crust burning or overcooking).</p>
<p>Stir the ingredients up one more time and put it in the pie shell.</p>
<p>Place the pie in the center of the rack.</p>
<p>Bake for 15 minutes</p>
<p>CHANGE TEMPERATURE TO 350F</p>
<p>Bake for 40 to 50 minutes (usually about 47 minutes)<br />
The pie is ready to remove from the oven when a stick or knife comes out of the center mostly clean.<br />
Don’t worry if there is a little bit of pumpkin pie stuff on the knife/stick.  The pie is going to keep cooking for a while.</p>
<p>Place pie on top of stove/oven, which should be pretty warm, and let it cool slowly (on a rack or equivalent).</p>
<p>Eat or refrigerate, then eat again. You might consider covering it with whipped cream.</p>
<p><strong>DISCUSSION</strong></p>
<p>There are two main features in this recipe.  First, the spices are approximately double the usual recommended spices. Second, the usual evaporated milk is partially substituted with heavy cream.  You can if fact use 100% heavy cream if you like but the 60:40 to 50:50 mix of heavy cream:evaporated milk works best.</p>
<p>If you live in certain regions of the world, such as Australia, you may not be able to find a can of pumpkin puree.  If so, obtain a pumpkin and cook it.  Get a small cooking pumpkin for this purpose.  Mush up the cooked pumpkin and measure out about 15 ounces.  If you can, grind the cooked material. You may mix any form of winter squash in there if you like.  Some of the best pumpkin pie is only half pumpkin, the rest butternut, acorn, or the squash formerly known as &#8220;turk&#8217;s head.&#8221; (The various winter squash may have diverse local names.)</p>
<p>Remember the extra stir just as you are putting the ingredients in the pie shell.  The dry spices tend to settle.</p>
<p>To help move the pie in and out of the oven in the early stages of baking, use a flat cookie sheet in the manner that a pizza paddle is used to manage a pizza.  Or use your pizza paddle if you have one.</p>
<p>When putting the aluminum foil strips on the crust, pinch the foil right on there to get it to stay in place and have close contact to avoid hot air circulating around the crust.</p>
<p>Use your favorite crust.  I don’t divulge my crust recipe because it tends to enrage people and I don’t need that. But it is very good and very simple.</p>
<p><H3>Kid Friendly Pumpkin Pie</H3></p>
<p>Follow the same procedure as above, but change the following:</p>
<p>1) Use one third or even one fourth of the indicated spices. Remember, the spices in the above recipe are double the usual. You want to approach half the usual.</p>
<p>2) Do use at least half butternut squash.  Kids like that better than pumpkin.</p>
<p>3) Go ahead and use 100% heavy cream instead of evaporated milk.  The kids are not watching their cholesterol yet.</p>
<p>4) (Optional) When pouring the mix in the shell, leave a little room. Then, after the pie is cooked, make some instant pudding of your kid&#8217;s preferred flavor, and pour it over the pie so there is a layer of pudding.</p>
<p>5) For this recipe, covering the pie with whipped cream is not optional. It is required.</p>
<p>6) Optional: sprinkle jimmies or similar over the whipped cream.</p>

<p>This is hoow to make excellent gravy with no stress and guaranteed success.  Without lumps.<br />
<span id="more-27924"></span><br />
I don&#8217;t do recipes.  I do theory.  But this theoretical approach will get you through.  Its very simple.</p>
<p>You are going to need the following:</p>
<p>A stick of butter or two, and an equal volume of regular flour.  You can use special fancy-dancy flour if you want, but that is not necessary.</p>
<p>Several cups of a liquid such as stock.</p>
<p>Some spices.  Which spices and how much depends on the stock.  Just have a lot.</p>
<p>Salt (this is separate from the spices)</p>
<p><strong>1) Make the Roux. </strong></p>
<p>This can be done ahead of time and reheated later.</p>
<p>Put all of the butter and all of the flower in a pan.  This is where your <a target="_blank" href="https://www.amazon.com/gp/product/B01GXP0K6O/ref=as_li_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=B01GXP0K6O&#038;linkCode=as2&#038;tag=grlasbl0a-20&#038;linkId=3ed49d9de398d32285bf05ab11fbc099">copper cooking pot shines</a><img loading="lazy" decoding="async" src="//ir-na.amazon-adsystem.com/e/ir?t=grlasbl0a-20&#038;l=am2&#038;o=1&#038;a=B01GXP0K6O" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />, by the way, but any sauce pan will do.  Start heating the mixture slowly as you use an appropriate utensil (a wooden spoon, for example) to mush up the butter with the flour.  As the pan gets hotter, the butter melts more and more. Your job is to introduce the melting butter to the dry flour so that they mix together and form a paste.</p>
<p>When you have a paste, it will be yellow-buttery colored, melty and hot.  Keep stirring it around and mixing it for a while.  Now you have a decision to make:</p>
<p>Do you want lighter gravy (for chicken) or dark gravy (for beef) or in between (for turkey)?</p>
<p>The more you heat the roux, the more it bubbles and boils &#8212; as you keep stirring it &#8212; the darker it will get.  At some point you will get scared it will burn and stop.  If you want dark gravy, be brave and let the roux cook.  Don&#8217;t worry, it won&#8217;t burn.  Probably.</p>
<p><strong>2) Turn the Roux into gravy.  </strong></p>
<p>Keep stirring the hot roux.  (If you are reheating roux you made earlier, let it get nice and hot first).  Dribble the liquid (the stock, etc.) into the roux.  The roux will react by bubbling around and complaining, then it will start turning into thick gravy.</p>
<p>Now, here&#8217;s the important part.  If you add the liquid somewhat slowly but steadily, there will come a point in time when the gravy looks a little thinner than you want it to be.</p>
<p><strong>STOP!! STOP NOW!!! STOP STOP STOP!!!!</strong></p>
<p><em>(but don&#8217;t get all stressed out or anything.)</em></p>
<p>Let the gravy re-thicken until it is a little thicker than you want it to be.  Then add more liquid. Then let it thicken.  Then add more liquid.  Each time the gravy will get less thick less quickly.  Then you are done.</p>
<p>Along the way, you can add stuff that is not the stock.  For example, you can add any of these items:</p>
<ul>
<li>The drippings from the pan you cooked the turkey in, depending on how you cooked the turkey.</li>
<li>A quarter cup of cream or half and half, or even milk (but dribble it in like the stock).</li>
<li>Water. (but don&#8217;t add water) </li>
<li>Chopped up bits of cooked turkey liver</li>
<li>Chopped up bits of turkey or chicken meat</li>
</ul>
<p>In adding these items, try to avoid adding something that is too cold from the refrigerator.  If you add something cold, add it slowly.  If you are adding drippings, you might want to separate out the greasy bits for the watery bits using a device <a href="http://www.amazon.com/gp/product/B0002YTGIQ/ref=as_li_tf_tl?ie=UTF8&#038;camp=1789&#038;creative=9325&#038;creativeASIN=B0002YTGIQ&#038;linkCode=as2&#038;tag=wwwgregladenc-20">like this one</a><img loading="lazy" decoding="async" src="https://www.assoc-amazon.com/e/ir?t=wwwgregladenc-20&#038;l=as2&#038;o=1&#038;a=B0002YTGIQ" width="1" height="1" border="0" alt="" style="border:none !important; margin:0px !important;" />.  The greasy bits can be used with butter to make roux, but it is the watery bits you want to add to the gravy that is underway.</p>
<p>3) Add additional spices.</p>
<p>How do you know if the gravy needs more spices (such as thyme, rosemary, ginger, sage, etc.?)  DON&#8221;T TASTE IT!  You should hardly ever taste what you are cooking.  Your taste buds will get mis-calibrated as soon as you taste something that is not spiced properly.  If you must taste your food, be sipping a cup of black coffee and some water to reset your taste buds now and then.  Better to use the aroma &#8230; smell the gravy.  If you can smell the spices, you&#8217;re good.</p>
<p>Now, add some black pepper because you did not add enough.  No matter what. Unless you are making this for Ben Zvan.</p>
<p>Finally, and only at the end, you can taste it and if you need to (depending on the stock) add some salt AT THE LAST MINUTE.  Always add the salt last.  Indeed, encourage your guests to add the salt at the dinner table.  This the appropriate time and place to add the salt.</p>

For making Amanda&#8217;s soup, which she brings to school, I combine one large container of vegetable stock, one large container of some sort of meat stock, and one large container worth of water, and go from there.</p>
<p>But making stock is fun, and sometimes necessary, especially if you have certain ingredients building up in you home and would rather have things go to waste than waist.</p>
<p>Here are my stock guidelines:<span id="more-27917"></span></p>

<li>Get a good stock pot. In my mind, the cheaper the better for a stock pot. It is more about how you watch the pot than how much you spent on it.</li>
<li>If you wouldn’t eat it by itself, consider not using it in the stock either. This does not apply to things such as onion skins, which are a great addition to stock. But don’t use anything that is off.</li>
<li>Use excellent water preferably clean tap water.</li>
<li>When using meat, start the meat in cold water and warm the water up very slowly. Ideally, your first bubbles indicating boiling will not appear until at least an hour after you’ve started the stock, if you’ve got three or four quarts (or more) of water in the pot. You can rush the meat if you have to, but always start with cold water.</li>
<li>Vegetables can be boiled in stock as quickly or slowly as you like.</li>
<li>Include some bunches of fresh spices. Just rinse them off and throw them in.</li>
<li>Avoid certain veggies that tend to have overpowering flavors, unless you really want the stock to be dominated by those flavors. Broccoli and asparagus come to mind.</li>
<li>Ditto with spices. If you use oregeno, use only a little. Avoid cilantro, that is better added fresh later.</li>
<li>Match the spices with with the meat. Rosemary goes with beef. Thyme goes with bird. Etc.</li>
</ul>
<p>I first posted something on making stock ten years ago almost to the day and since then, readers have contributed additional and excellent suggestions. Here are some of them:</p>

<li>if you’re using a chicken or turkey carcase to make stock, watch out for seasonings used to roast the bird. I made a stock with bones and leftover meat from a chicken I had roasted over the barbeque with jerk seasoning. I almost threw up my GI tract when I tasted it! . T. Bruce McNeely</li>
<li>The cold water, slow heating start is especially important if you want a clear stock. -chezjake</li>
<li>Besides the herbs mentioned, most stocks benefit from the addition of a bay leaf, a couple of whole, peeled garlic cloves, and 6-8 whole peppercorns. -chezjake</li>
<li>In addition, I’d add that I’ve had some excellent results for both the dinner and the subsequent stock from smoke roasting turkey or chicken in an outdoor smoker. The downside being the lack of good drippings for gravy. -chezjake</li>
<li>A cool way to clarify the stock is to add a little gelatin while it’s hot, make the gel, then freeze it and then put it in the fridge in strainer over a bowl. The ice crystals will separate the clear liquid from the gel and when they melt, the stock will drain into the bowl below, leaving the fat and solids trapped in the gel. -Mr Gunn</li>
<li>Instead of using gelatin to clarify the stock, I strain the stock of the veggies and herbs (use a bouquet garni), return the now strained stock to the simmer, add several egg whites and continue simmering it for a bit (30 minutes or so). The egg whites will solidify, absorbing the impurities. Then _carefully_ strain the stock through a cheesecloth, being careful not to break up the “scrambled” egg whites, now a greyish icky layer on top of your stockpot. This will give you a beautifully clear stock, ideal for consomme. Time-consuming? Yes. But definitely worth your while, especially if you make LOTS. &#8211; andy</li>
<li>PS: Discard the bones, but use the meat for curry. -andy</li>
<li>I’ve heard that a little acid (apple cider vinegar is often recommended) will help to break down the connective tissues further. I can’t verify if that is true, but I usually add a little anyway. Just go easy on it if you plan to use the stock for cooking dried beans or lentils. &#8211; Marnie</li>
<li>I also keep some ox tail in the freezer to add when I’m making stock. That stuff is just lousy with collagen and gives the stock a great silkiness. I use it even in chicken stock. I’m not a purist. &#8211; Marnie</li>
<li>The egg white way was how I was taught to clarify a stock. Greg I would recommend roasting the bones first before making the stock from them – much more flavour that way. &#8211; Doug Alder</li>
