Given the heritage of the indigenous folks in Mexico (the folks here when the Aztecs were conquered different regions of Mexico have different cuisines. 
Interestingly Tacos may have taken over from white bread for example, but that is just discovery by folks in the US of what other cuisines offer. 
Of course if you want to talk about change, when I grew up in MI in the 1960s there was no mexican food about, chinese was just coming in. I moved to Ca in the early 1970s and discovered their form of Mexican Food, and then to Tx and its form of mexican food.]]></description>
